Why do mountain bikes have 2 piece rotors?
Two piece are also better at shedding heat. This is designed to be a high speed conduit for heat to get out of the rotor and onto the fins, where it will be dissipated quickly. Really good design, and if you are doing big technical descents, worth having.

What are floating rotors?

Can I replace just one rotor?
Yes , you can install just one disk/rotor without the other. BUT the Brake pads should ALWAYS be replaced on BOTH sides, AT THE SAME TIME. If you only replace pads on that one side with the new rotor, then you will run into the same problem later on, but on the other side.
Do bigger rotors increase stopping power?
A larger rotor provides more metal to absorb the heat and a greater surface area to dissipate it. Hence they can sustain higher braking power for longer. So, yes, larger rotors do provide more braking power. This is why high performance cars use enormous brakes, but little shopping cars have tiny little brakes.
