Will increasing pipe size increase pressure?
Increasing pipe size doesn’t increase the pressure of standing (still) water; but, it has the effect of reducing resistance (pressure drop) in flowing water. When flow is in a narrow pipe, there is some pressure drop along the pipe. If a larger diameter pipe is used, the pressure drop per foot of pipe is less.

What is the difference between 1/2 copper to 3/4 PEX?
Copper has the larger opening. As to 1/2 copper to 3/4 pex I dont know for sure. This said I would not run my hot lines at the larger size as the pipe holds more water and will waste more water waiting for hot or sitting in the pipes cooling. If you can insulate both hot and cold pipes… its a minor cost that will pay for it self soon.
